2 tablespoons butter, melted

½ cup pecans, chopped

⅓ cup packed brown sugar

¼ cup corn syrup

2 eggs

⅛ teaspoon salt

½ teaspoons vanilla


1. Preheat the oven to 350 degrees.

2. In a large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt, vanilla, and eggs.

3. Cook on the stove top over medium-low heat just until thickened. (You don’t want it dry, just slightly thickened, about the consistency of pudding).

4. Remove from heat and set aside.

5. Next, using pastry you make or purchased ready made at the store, roll out and cut circles 2-3 inches) depending on th3 size you want your cookies.

6. Place on a parchment lines cookie sheet

7. Roll up the edges of the pastry to add some height to the edges.

8. Place about 1 tablespoon, depending on the size of your cookie, of the pecan topping Serve and enjoy!

9. Bake in the oven for 8 to 10 minutes until topping is set and pastry dough is done.

10. Remove from oven and cool on a wire rack.
