1 cup packed light brown sugar

½ cup all-purpose flour

1 cup chopped pecans

11 tbsp. salted butter (melted and cooled)

2 eggs beaten

2 tbsp. of brown sugar for topping

2 tbsp. of finely chopped pecans for topping


1. In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl, beat together the eggs and the melted, cooled butter. Stir in dry ingredients just until combined. Do not overmix. Preheat oven to 350 degrees F. Grease 8 muffin cups generously to prevent sticking.

2. Spoon batter into muffin cups. Spoon the topping mixture over each batter filled muffin cup and bake for 15-18 minutes.

3. Let muffins cool from the oven for 10 minutes and then take out of the muffin pan and continue to cool on wire racks or until ready to eat.

4. Topping. In a small bowl combine the 2 Tbsp. of brown sugar with the 2 Tbsp. of finely chopped pecans. Mix together well and set aside.
