1 large chicken

10 shallots (marinade)

5 garlic clove (marinade)

2-inch ginger (marinade)

2 tsp black pepper (marinade)

3 tbsp soy sauce (marinade)

salt (marinade)

potato sliced

onion sliced

brinjal sliced

carrot sliced

capsicum sliced

plantain sliced




1. Prick the flesh of the chicken all over with a fork. Using a sharp knife, cut slashes in the flesh to allow the marinade to penetrate. Place the chicken in a large shallow dish.

2. Mix the ingredients listed in marination and blend well in a blender and massage the chicken on all sides using your hand into the slits and massage it well. Then cover and leave it in refrigerator for 8 hours or overnight.

3. Preheat the oven to 250 degrees C. Pour oil and Place the sliced vegetable on a baking tray sprinkle salt and place the marinated chicken and bake till done and serve.
