2 large eggs beaten well

2 medium carrots grated

1/2 capsicum chopped

1 tsp ginger-garlic paste

1 tsp chopped coriander leaves

1/2 tsp coriander powder

1/4 tsp cumin powder

1/4 tsp red chilli powder

1 tbsp low-fat curd

salt to taste


1. Combine all the ingredients for the filling expect eggs, and roast in a non-stick pan till carrot cooks completely.

2. Final assembling - pour the beaten eggs in a non-stick pan. Let it cool completely in low heat without turning it. Sprinkle pepper generously.

3. Now spread filling on half the omelet. Lift the remaining half and cover the filling. Remove from pan and serve on a plate with a sprinkle of chopped dill.
