4 eggs

2 c milk

1 1/3 c flour

1/4 tsp. salt

2 tbsp. sugar

1 tsp. vanilla

1 1/2 tsp. vegetable oil

2 c strawberries chopped (filling)

1/2 c sugar (filling)

8 oz. cream cheese (filling)

1/2 c powdered sugar (filling)

1/2 tsp. vanilla (filling)


1. Batter Instructions. In a blender combine all ingredients for batter, and blend until smooth. Cover and put in refrigerator for one hour. Spray a skillet with no-stick spray, and heat at medium heat. Pour 1/4 of batter onto the skillet. Tilt to completely coat the pan. Cook for 3 to 4 minutes until golden, flipping one time. The thinner the batter, the better.

2. Filling Instructions. Combine strawberries with sugar and set aside. In a bowl, combine cream cheese, powdered sugar and vanilla. Mix until smooth. Fold strawberries into mixture and mix well. Fill each crepe with 1 to 2 Tbsp. of filling. Roll up and serve with whipped cream.
