1 spaghetti squash halved lengthwise; seeds removed

1 med. onion chopped

2 plum tomato's chopped

1 c. 1% cottage cheese

1/2 c. shredded low fat mozzarella cheese

1/4 c. Parmesan cheese

2 cloves garlic

1/4 c. finely chopped parsley

1 c. fresh mushrooms chopped

1 bag Jimmy Dean Turkey sausage crumbles


1. Preheat oven 400. Spray 13 x 9 pan with Pam. Place squash cut side down on pan. Bake for 40 min. or until tender. Once cooked take a fork and scrape squash strands into a large bowl.

2. Sauté onion in olive oil for 3 4 min. Add tomatoes and mushrooms and cook 4-5 min. Add turkey sausage crumbles and cook 3 min. or until mixture is dry.

3. To the bowl with the squash, add cottage cheese, mozzarella, parsley and onion mixture. Stir to mix. Put mixture into squash shells and bake 40 50 min. or until heated throughout. Sprinkle with Parmesan cheese and bake until melted.

4. For those of you that have never had spaghetti squash, the shell is not edible. If you want to use it as a side dish then omit the sausage.
