18 ounces ready rice, original

1 egg

1/4 cup Greek yogurt

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon curry powder

1/8 teaspoon ground cinnamon

1 tablespoon butter, melted

half package Smoked Premium Cooking Sausage, sliced

1 whole zucchini, sliced ¼-inch pieces

4 ounces mushrooms, sliced (115g)


1. Preheat oven to 375˚F. (190 degrees C)

2. Mix rice, egg, yogurt, salt, pepper, cinnamon and curry until blended.

3. Pour 1 tablespoon butter into 8-inch x 8-inch baking dish. Spread half of rice mixture into dish.

4. Spread sausage pieces on top of rice.

5. Sauté zucchini and mushrooms in 1 tablespoon olive oil until lightly browned and soft.

6. Spread over sausage layer.

7. Spread rest of rice on top.

8. Cover with foil and bake for 45 minutes.

9. Let sit 10 minutes and serve.
