5 eggs, separated

1 cup unsalted butter, soft

3/4 cup sugar

2 tsp.vanilla extract

3 1 1/2 cups all-purpose flour


1. Preheat oven to 180 ºC. Butter a 20 10 cm loaf pan. In a pot, whisking egg whites until stiffing. Reserving.

2. In another bowl, with the same beaters, whisk the butter, sugar and vanilla extract with an electric mixer until the mixture becomes white. Add egg yolks & keep to beat. Employ an electric mixer, progressively add the flour & blend until just incorporate.

3. Add half of the egg whites to the previous mixture at low speed. Gently fold in the rest of the egg whites with a spatula, folding them into the dough.

4. Pour appliance into the mold and level well. Baking in middle of the oven for 41 to 51 min.
