Ingredients:

1 stick sweet cream butter, unsalted

1 ½ c. shortening

2 c. sugar

2 c. flour

1 tsp. soda

5 egg yolks

1 c. buttermilk

1 tsp. vanilla

1 small can coconut

1 c. chopped nuts, (pecan or walnut)

1 8oz. cream cheese (icing)

1 stick sweet cream butter, unsalted (icing)

1 box powdered sugar 16oz. (icing)

1 tsp. vanilla (icing)

1 c. chopped nuts (icing)

Directions:

1. Blend first 3 ingredients together in a large blender. Sift next 2 ingredients together.

2. Add all remaining ingredients expect icing to mixture in blender, & blend.

3. Beat 5 egg whites until stiff, fold in with all the ingredients in the blender.

4. Grease & flour 2-9” or 3-8” pans or one large pan 8x12x2”.

5. Bake 350° for 25 minutes or until cake pulls away from the preterit of the cake pan and is a golden brown.

6. Icing. Blend all these together, ice cake when completely cool.
