1 cup almond flour

1/2 cup coconut flour

1 1/2 cups apples, sliced or chopped

1 tsp. baking soda

2 tsp. ground cinnamon

4 eggs, beaten

1 cup homemade applesauce

2 tsp. vanilla extract

2 tbsp. ghee, melted

1/4 cup sliced almonds


1. Preheat oven to 375 F.

2. Combine all the ingredients (except the almonds) with half the sliced apples in a bowl, and mix until everything is well combined.

3. Evenly scoop the mixture into a muffin pan. Top each muffin with the remaining sliced apples, and sprinkle with the almonds.

4. Bake in the preheated oven 20 to 25 minutes, or until firm to the touch and a toothpick inserted in the middle comes out clean.
