1 ½ cups flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup sugar

1 cup maple syrup

½ cup unsalted butter, room temperature

2 eggs

½ tsp vanilla extract

⅔ cup whole milk

½ tsp maple extract

4 egg yolks (maple hollandaise sauce)

1 tbsp freshly squeezed lemon juice (maple hollandaise sauce)

½ cup unsalted butter, melted

¼ cup maple syrup (maple hollandaise sauce)

1 pinch salt (maple hollandaise sauce)

3 cups water (poached eggs)

¼ cup white vinegar (poached eggs)

6 eggs (poached eggs)

1. Preheat oven to 350ºF (175ºC). Spray a large muffin tin with non-stick spray. In the bowl of a stand mixer combine flour, baking powder, baking soda, and salt. Mix in the sugar and maple syrup until well combined. Next add the butter and mix on a medium speed until fully incorporated, about 3 minutes. Then mix in eggs, vanilla extract, and milk. Pour into large muffin tin ¾ full. Bake for 15-20 minutes. Use a toothpick to poke cupcake, if it comes out clean its ready.

2. In a stainless steel bowl, vigorously whisk together the egg yolks and lemon juice until the mixture is thickened and doubles in volume. Place the bowl over a saucepan containing a small amount of simmering water (the water should not touch the bowl). Continue to whisk the egg/lemon rapidly. Don’t let the eggs get too hot or they will scramble. Slowly drizzle the melted butter and continue to whisk until the sauce doubles in volume again. Remove from heat and whisk in maple syrup and salt. Set aside.

3. Bring water and vinegar to a boil, reduce heat to a simmer. Crack each egg separately into a cup or bowl. Very gently add 1-2 eggs to the pot. Using a spoon gently stir in a circular motion to prevent the eggs from sticking to the pot. After 2-4 minutes, the eggs should be done. Remove and place on paper towel. Repeat for remaining eggs.

4. To assemble, add a slice of cooked peameal bacon on top of the cupcake. Then add a poached egg, hollandaise sauce, a piece of bacon, and dill.
