1 tin condensed milk

3 eggs

½ cup lemon juice

½ cup castor sugar

1 ready made granola pie base or make your own

1/2 cup butter, melted (crust)

1 1/2 cups granola (crust)

1/3 cup chopped nuts (crust)

3 tbsp. brown sugar (crust)


1. To prepare the granola pie crust. Mix together all ingredients. Press into 8 inch pie pan and chill until set. This is a never fail recipe.

2. To prepare the lemon meringue pie. Heat oven to 300 degrees F / 149 degrees C / Gas 2 Cool or Slow. Separate 3 egg whites and yolks into 2 different bowls. Whisk egg whites until stiff - (Must be able to turn bowl upside down without it falling out!). Add castor sugar slowly and continue whisking. Set aside. Mix egg yolks and then add the tin of Condensed Milk. Measure half a cup of lemon juice and SLOWLY add to yolk mixture. The mixture starts thickening.

3. Beat slowly for about a minute. Add egg mixture to ready made granola pie base or your own pie base.

4. Top with Meringue and spread evenly on top. Bake for 25 minutes. Cool pie on oven rack. Refrigerate Pie and Enjoy!
