4 eggs

2 lemons freshly squeezed

lemon zest

1 cup sugar

1 cup flour

60 ml oil

10 mls. baking powder

5 mls. lemon essence

125 ml hot water



1. Squeeze the lemon and add the water, allow to cool. Sift flour, baking powder and salt. Beat egg yolks in bowl; add sugar, oil, lemon essence, zest, and lemon mixture.

2. Beat egg white till stiff and add to mixture (make sure to fold lightly). Bake at 200 degrees until golden brown.

3. You are ready to enjoy it and obviously. Pack some for school children going. It’s that simple.
