4 cups flour(apf or cake flour)

1 tsp baking powder

2/3 cup butter or margarine

1/2 tsp salt

2 1/2 cups sugar

1 tsp cinnamon

2 eggs beaten

1 1/2 cup milk

1 tsp baking soda

1 cup brown sugar

1/2 cup dessicated coconut


1. Blend first five dry ingredients; set aside 1 cup for topping later.

2. In a separate bowl, mix the eggs, milk and baking soda together.

3. Blend the remaining portion of the original crumb mixture, stir thoroughly.

4. Add brown sugar, coconut and cinnamon to the cup you set aside.

5. Pour coffee cake batter mixture into 3 greased 8" cake pans.

6. Sprinkle topping equally on top of batter in all 3 pans.

7. Bake at 350 degrees F for 35 minutes.
