1 1/2 cups all-purpose flour / plain flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tablespoon sugar

1 cup milk

1/4 cup buttermilk

1 egg

3 tablespoons butter, melted


1. In a large bowl, mix together dry ingredients, then make a well in the center.

2. Pour the milk, buttermilk, egg, and melted butter into the well, then fold the ingredients in together until smooth.

3. Heat a griddle or frying pan over medium-high heat and add a little oil to the center. Ladle batter onto the griddle (about 1/4 cup per pancake). Let brown on one side before flipping.

4. Cook until second side is browned, then serve hot.
