Ingredients:

2 cups pitted dates

1 ½ cup carrots

1 cup shredded coconut + extra for topping

1 tsp cinnamon

½ tsp nutmeg

Directions:

1. Place all ingredients into a food processor and pulse until mixed together.

2. Remove mixture and form into bite-size balls; the size is up to you (approximately the size of golf balls, but feel free to make yours larger if you wish).

3. Store in refrigerator and try not to eat all in one sitting.
