Chocolate Coconut Oatmeal Breakfast Cookies

Ingredients:

1/2 cup butter, softened

1/2 cup creamy peanut butter

1 1/4 cup granulated sugar / caster sugar

1 egg

1/4 cup water

1 teaspoon vanilla

1 1/2 cups all purpose flour / plain flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup old fashioned oats

1 cup chopped pecans (or other favorite nut)

1 cup shredded coconut

1 1/2 cups bittersweet chocolate chips

Directions:

1. Cream butter and peanut butter. Add in sugar and beat for 5 minutes. Add in egg, water and vanilla, cream until well combined. Stir in flour, baking soda and salt.

2. Mix in oats, chopped nuts and coconut. Fold in chocolate chips. Drop by heaping tablespoon about 3 inches apart on ungreased baking sheet.

3. Bake in a preheated 375 degree oven for 10-12 minutes. Let cool on baking sheet for 5 minutes then remove to racks to cool completely. These freeze well.
