1/3 - 1/2 a tuna tin

1-2 tbsp. fat free Greek yoghurt

1 salad onions chopped

red and yellow pepper (handful of each chopped up)

chuck of courgette chopped

2 salad tomatoes chopped

capers (optional)

salt and pepper

shed loads of fresh basil

3 eggs

splash of olive oil

oil a frying pan


1. Mix up all very well. Fry until sides bubble up.

2. Then put the frying pan under a hot grill - make sure your handle can't melt and use a glove to stop yourself burning your hand.

3. Grill until the mixture bubbles up and goes golden in the middle.
