1 pie crust, uncooked

6 strips bacon, cooked and crumbled

5 eggs

1/2 c. whole milk

1 small zucchini, shredded

1 small onion, chopped

1 tbs. butter

1/2 c. shredded sharp cheddar cheese

1 c. shredded swiss cheese

pinch of salt and pepper


1. Heat oven to 350 degrees.

2. Using the same skillet you cooked the bacon in, drain the grease (storing for use later in the fridge for other recipes) and add in the butter, sauté the onion and zucchini about 3-4 minutes.

3. Remove from heat and set aside.

4. In a mixing bowl beat the eggs and add in the milk, salt and pepper.

5. Add the bacon, zucchini and onion and combine well.

6. Stir in the cheeses.

7. Place the pie crust on a cookie sheet (to catch any overflow), pour the mixture into the crust and bake for 30-40 minutes or until set.

8. Remove from oven and let sit 5 minutes before cutting. It will deflate during this time.
