1 cup almond flour
3 tbsp. + 1 ½ tsp melted butter
1 ½ tsp. baking powder
1 ½ tsp. xanthan gum
3 eggs, beaten
2 ¼ cup shredded cheese
1 tsp minced garlic
1. Mix all ingredients together well, forming a dough. It will seem a little dry, but that is how it should be.
2. Refrigerate for 20 minutes or until chilled. Preheat oven to 375 and spray a cookie sheet with non-stick spray. spoon dough onto cookie sheet, it should make 12. Bake for 10-12 minutes until browned.
