4 whole eggs, 4 egg whites

1 cup cleaned, grilled or blanched asparagus

2 oz. baby swiss

1/2 sweet onion

sea salt & pepper


1. Preheat oven to 350 degrees. Heat 1/4 cup water in pan and add chopped onions. Cook for 5 - 8 minutes until soft. Add more water if they start to stick.

2. As onions are cooking grill or blanch asparagus. Cool, then cut asparagus in 1-2 inch pieces.

3. In a medium bowl add eggs and whisk. Can add 1/8-1/4 cup milk if you want them creamier. Add onions, asparagus and cheese.

4. Spray pie dish with oil.

5. Add egg mixture to dish and cook in oven for 25- 30 minutes. Check after 20 due to variance in oven heat.
