1 large red onion, diced
3 cups fresh broccoli florets
3 cups cauliflower florets, fresh
1/2 cup sliced almonds
1/2 cup carrot, shredded
1 cup blue cheese, crumbled
3/4 cup fat free sour cream
1/4 cup plain fat-free yogurt
1/3 cup fresh parsley, snipped
1 & 1/2 teaspoons dried coriander
salt and pepper
1. In a large bowl, mix the first 6 ingredients together.
2. In a smaller bowl mix the remaining 5 ingredients together to make dressing.
3. Add the dressing to the salad and mix well. keep refrigerated until ready to serve.
