1 onion chopped
low fat cooking spray
1 tsp cumin seeds
1/4 tsp ground turmeric
pinch hot chili powder
2 tbs. tomato puree
7 oz. potatoes diced
7 oz. cauliflower broken into florets
3 fresh tomatoes chopped roughly
5 fl. oz. skimmed milk
salt & ground black pepper
2 tbs. freshly chopped coriander
1. Fry onion in low fat cooking spray over high heat till browned then stir in cumin seeds and cook for 30 seconds, add turmeric, chili , tomato puree and mix in the potatoes & cauliflower to coat in the spice paste, add chopped tomato, milk, 3 tbs. water and seasoning, bring to a simmer cover & cook for 10 mins, remove lid and cook for another 5 mins to reduce sauce, serve with coriander leaves scattered over the curry.
