Ingredients:

1 dozen large eggs

1 red bell peppers, diced

1 green bell peppers, diced

1 tsp. garlic salt

1 tbsp. buffalo sauce

1 lb. cooked sausage

2 cups shredded Colby jack cheese

Directions:

1. Preheat oven to 375 degrees.

2. Whisk all eggs together.

3. Add bell peppers, garlic salt, buffalo sauce, cooked sausage, and cheese. Stir well to make sure you have a little bit of everything in each muffin.

4. Use a large ice cream scoop to evenly distribute the mixture into 16 pre-greased liners.

5. Cook for 12-15 minutes or until the tops just start to brown. Note: You can freeze these in big batches and reheat them in the microwave in about 1-1.5 minutes.
