2 6-oz. center-cut pork chops
1 mango, peeled, pitted, and diced
1/2 cup cherry tomatoes, quartered
2 tbsp fresh cilantro, chopped
2 tsp red wine vinegar
1 tsp extra virgin olive oil
1 tbsp dried thyme
1 tsp ground allspice
1/2 tsp ground coriander
1/2 tsp salt
1/8 tsp cayenne
Pinch of nutmeg
Pinch of ground cloves
1. Combine the ingredients for the spice rub (1 tbsp dried thyme, 1 tsp ground allspice, 1/2 tsp ground coriander, 1/2 tsp salt, 1/8 tsp cayenne, рinch of nutmeg, рinch of ground cloves) in a small bowl and stir. 2. Rub into the pork chops and set aside.
3. Add the mango, tomatoes, cilantro, red wine vinegar, and olive oil to a small bowl and toss to combine. Set aside.
4. Heat the grill to medium-high and cook the pork for 3-4 minutes per side, or until cooked through.
5. Serve warm topped with mango salsa.
