Ingredients:

zucchini (courgette)

red capsicum (pepper)

eggplant (aubergine)

sweet potato (kumera)

a good dollop of tofu mayonnaise

some tomato chilli relish

Bread of your choice

Directions:

1. Slice all the vegetables thinly and grill on a BBQ or grill plate until cooked.

2. Cut your bread and spread with tofu mayonnaise and tomato relish. Layer on the vegetable.

3. Cook in a sandwich press or grill pan.
