1/16 Cup extra-virgin olive oil
1 green onion, chopped
1/4 frozen spinach
1/2 Tablespoon fresh chopped parsley
1/4 Tablespoon dill weed
1/16 Teaspoon salt
1/16 Teaspoon black pepper
3/4 large egg
1/2 Tablespoon sunflower seeds
4 Ounces turkey sausage
1/4 Cup fresh cherries
1. Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Cook green onions and turkey sausage until turkey is thoroughly cooked.
2. Transfer to a large bowl. Add spinach, parsley, salt and pepper to bowl; mix well. Pour in eggs and add sunflower seeds. Mix until thoroughly combined.
3. Heat remaining 2 teaspoons oil in the same skillet. Pour in spinach mixture; flatten with a spatula to level. Cover and cook over medium heat 8-10 minutes, until pancake is set. Invert pancake onto a plate. Cut into wedges. Serve hot or at room temperature with fresh cherries.
