2 shakes Tabasco sauce
1 cup buttermilk (shake well before pouring)
4 cups crushed cornflakes crumbs
3/4 cups Parmesan cheese
8 assorted chicken pieces
salt and pepper
1. Preheat the oven to 350 degrees. Line a cookie sheet with foil and spray with cooking spray. Add Tabasco to buttermilk and pour in shallow dish.
2. Place cornflakes and cheese in a bowl and mix well. Coat chicken pieces in the buttermilk, and then add to crumb mixture and toss to coat. Place the coated chicken pieces on the cookie sheet and sprinkle with salt and pepper.
3. Bake the chicken until the crust is golden brown and the meat is no longer pink. Approximately 45 minutes - 1 hour depending on parts used. For tenders, reduce time as required. Enjoy.
