Hawaiian Pasta Salad with Pineapple Dressing

8 ounce of rotini or bowtie pasta

1 (14 ounce) can of pineapple tidbits, drain thoroughly and reserve the juice

1 red pepper, diced

2 cups diced ham

1 green onion, thinly sliced

½ cup mayonnaise (dressing)

¼ cup sour cream (dressing)

1 tbsp. dijon mustard (dressing)

1/3 cup of the reserved pineapple juice (dressing)

1 tsp. of honey (dressing)

¼ tsp. garlic powder (dressing)

black pepper to taste (dressing)


1. Cook the pasta according to package directions, approximately 10 minutes. Do not overcook.

2. Rinse under cold running water and drain completely.

3. Whisk together the Pineapple Dressing ingredients. Pour over noodles, ham, peppers and onions.

4. Gently toss until completely coated. Refrigerate at least 2 hours before serving. This will keep refrigerated for 5 days.
