8 eggs

2 med avocados (mashed)

1 tbsp cilantro

2 tbsp lime juice

2 tbsp chopped onions

salt & pepper to taste



1. Boil 8 eggs, let eggs cool, then peel. Cut boiled eggs in half, place the yolks in a bowl and add all ingredients. Mix together and spoon into the egg whites.

2. Sprinkle a little paprika on top.There might be some filling left over - you can use it for a dip or to stuff celery, etc.

3. This recipe can be halved or doubled as needed.
