1 onion chopped
low fat cooking spray
1 tsp cumin seeds
1/4 tsp ground turmeric
pinch hot chilli powder
2 tbs tomato puree
7 oz potatoes diced
7 oz cauliflower broken into florets
3 fresh tomatoes chopped roughly
5 fl oz skimmed milk
salt & ground black pepper
2 tbs freshly chopped coriander
1. Fry onion in low fat cooking spray over high heat till browned then stir in cumin seeds and cook for 30 seconds, add turmeric, chilli , tomato puree and mix in the potatoes & cauliflower to coat in the spice paste, add chopped tomoato, milk, 3 tbs water and seasoning, bring to a simmer cover & cook for 10 mins, remove lid and cook for another 5mins to reduce sauce, serve with coriander leaves scattered over the curry.
