6 med. peppers

1 1/2 lbs. of ground beef

1 med. onion

1/2 tsp salt

2 cups of shredded cheddar cheese

2 1/2 c. of chopped tomatoes

1 1/2 cup of cooked rice


1. Cut tops of peppers and remove seeds, rinse well cook in boiling water for 8 min.

2. Meanwhile cook your ground beef with your onions and salt, drain, and then add your cheese, chopped tomatoes and rice. Stir well.

3. Drain your peppers and then stuff with meat mixture. Place in a baking dish and bake at 350 degrees for 20 min.
