10 oz. of wild salmon

1/8 cup mayo

3 tablespoons chopped celery

1/4 chopped onion (white or green)


1. Mix in a bowl and season with S & P to taste.

2. Garnish with tomato slices and giardiniera.

3. If using a collard green, cut out the tough middle stem.
