100 g quinoa flour

250 ml low fat milk

2 eggs

5 g (1.5 teaspoon) baking powder

200 g low fat feta cheese

80 g fresh spinach


1. Pancakes: mix (whisk) all ingredients for the pancakes together in a bowl.

2. Heat up a pan over medium heat.

3. Poor 1/3 of the mixture in the pan.

4. Bake each side a few minutes.

5. Distribute 1/3 of the raw spinach and 1/3 of the low fat feta cheese on the pancakes.

6. Close the pancake and bake each side for a few minutes.
