250 ml heavy whipping cream
2 tbsp melted butter or coconut oil
2 whole large eggs
200 grams almond flour
1 tsp vanilla extract
2 tsp baking powder
1/2 tsp xantham gum
3 tbsp powdered or granulated sweetener
handful of blueberries
1. In a medium size bowl Add the heavy whipping cream, eggs, melted butter, vanilla extract, xantham gum, baking powder and sugar substitute. Mix together.
2. Add the almond flour and mix until everything until just combined. It should be look a like cake batter. See the photo below. Mix the blueberry
3. Butter the ramekins and scoop some pancake batter, make sure it’s not too full, to prevent overflowing once you microwave it.
4. Microwave for 1 minute and 30 seconds and ready to serve.
