Tapioca Pudding

Ingredients:

5 1/2 c milk

2/3 c tapioca pearls

1/2 c sugar

2 tbs. vanilla extract

2 eggs, beaten

Directions:

1. Spray the pot with oil spray, then add all the ingredients except for the eggs into the pot (this is not pot in pot). Mix well. Press Manual setting and set it for 7 min, high pressure.

2. Let it natural release for about 12 min (to avoid spraying milk everywhere), and then whisk in some of the tapioca pudding into the eggs to temper them, before slowly whisking the tempered eggs into the tapioca pudding. The heat of the pudding should be enough to cook the eggs. We ate some of it while it was still warm, but the rest will go into the fridge.
