semolina/suji 1 cup (fine variety)
mango pulp 1 cup (fresh)
oil 1/4 cup
sugar 3/4 cup (powdered)
baking powder 1 tsp.
grounded cardamom/elichi 1/2 tsp.
1. Mix suji with sugar, cardamom n baking powder. Mix well. Then add oil, mix well, finally add mango pulp, mix it well, rest for 15 mins.
2. Pour in a greased cake tin, garnish with chopped dry fruits.
3. Pre heat oven n bake for 30-35 mins at 170c. Keep checking after 25 mins with a tooth pick. If after resting for 15 mins if the batter still runny then, rest it for more 20 mins or till the semolina absorbs the liquid. Decrease or increase the quantity of sugar according to the sweetness of the mango.
