2 cups of corn bread
1 – 10 oz. can of enchilada sauce, divided
1/2 tsp salt
1 1/2 lbs. of ground beef
1 8 oz. can tomato sauce
1/2 cup of shredded Mexican cheese
1. In a large bowl combine the corn bread with a 1/2 cup of enchilada sauce and salt. Add beef. Mix well. Make into 1" balls.
2. Place the meat balls on a greased rack. In a shallow pan bake at 350° for 25 -30 min.
3. In a small pan heat tomato sauce and the rest of the enchilada sauce.
4. When Meatballs are done transfer them to an oven safe platter and top with sauce and cheese. Place in the oven for 1-2 min. to melt cheese.
