4 large bone/skinless chicken breasts - each cut into 3 pieces
1 c light may
3/4 c. parmesan cheese
1/2 c. flour
1/2 c. corn starch
1 tbsp pepper
1 tsp. garlic powder
1 tsp salt
any seasoning of your choice
1. In a large bowl combine the last 7 ingredients. Rub the chicken breasts with the mayo and then dip (coat) each one in the cheese mixture making sure they are well covered in it. Line a pan with tin foil and spray with cooking spray.
2. Place the chicken breast tenders on the pan and lightly spray the tops with cooking spray.
3. Bake at 350 degrees for 30-45 minutes. Careful to not overcook because no one likes chicken that splinters like wood.
