Ingredients:

2 vine ripened tomatoes diced

½ red onion finely diced (about ¼ cup)

½ jalapeño pepper finely diced

½ cup freshly chopped cilantro

juice from 1 lime (don’t forget microwave trick)

1 teaspoon olive oil

salt and pepper to taste

Directions:

1. Preheat oven to 350.

2. Clean the brown inside of 2 Portobello mushrooms with a melon baller or spoon. Spray both sides with olive oil and add salt and pepper. Bake in a 350 oven for 25-30 minutes cleaned side up. If any liquid accumulates in the center of the mushroom drain it out. Remove from oven and let cool for 15 minutes.

3. Top with Pico de Gallo and serve.
