24 oz cream cheese

3/4 cup brown sugar, packed

1 1/2 tbsp vanilla extract

1 cup M&M's

60 drops green food coloring

1/2 cup caramel sauce (sauce)

12 drops green food coloring (sauce)

1 standard recipe for chocolate brownies


1. Cheesecake Filling: In a medium bowl, add cream cheese, brown sugar, and vanilla. Beat with a hand mixer until there are no more clumps. Slowly add green food coloring until desired color is reached. To achieve the color in the picture, use 60 drops of green food coloring. Cover bowl and place filling in the refrigerator until brownies are baked.

2. Caramel Sauce: Add caramel sauce to a small bowl. Slowly add green food coloring until desired color is reached. If caramel sauce is too thin, place in the refrigerator for 5 minutes at a time until sauce thickens.

3. Brownie Cauldrons: Prepare brownie batter per package or recipe instructions. Using cooking spray, spray the inside of the first muffin tin and then spray the bottom of the second muffin tin. In the first muffin tin, add brownie batter to the cups so that they are 2/3 full. Place the second muffin tin on top of the first muffin tin, lining up the cups so that the bottom of the second tin is touching the brownie batter (ie - stack the muffin tins). Gently press down on the top muffin tin until a small amount of brownie batter can be seen pushing up around the sides. Bake brownies in the oven per package or recipe instructions, reducing cook time by 2-3 minutes. Allow brownies to cool 5 minutes.

4. Putting it all Together: Pop brownie cups out of the muffin tin. If needed, use a butter knife and gently lift around edges to release brownies. Remove cheesecake filling from the refrigerator. Add M&M's and gently fold together with a spatula. If desired, leave some M&M's for garnish. Scoop out roughly 2-4 tablespoons of cheesecake filling and place in center of brownie cup. Add additional M&M's on top as desired. Drizzle caramel sauce on top of cheesecake filling. If caramel sauce is too thick, heat in the microwave 5 seconds at a time until desired consistency. Can be served immediately or kept frozen until serving.
