1 red onion diced
¼ cup pitted kalamata olives (or black olives)
1 green pepper chopped
4 tomatoes chopped
1 long English cucumber chopped
1 cup feta cheese crumbled
⅓ cup olive oil (dressing)
½ lemon juiced (dressing)
2 tablespoons red wine vinegar (dressing)
1 pinch sugar (dressing)
1 teaspoon oregano (dressing)
½ teaspoon basil (dressing)
1. Combine all dressing ingredients in a small bowl and mix well. Or alternately add all ingredients in a mason jar with a tight fitting lid and shake to mix.
2. In a large bowl combine the red onion, black olives, green pepper, tomatoes, and cucumber and feta cheese.
3. Pour the dressing over the salad and toss to combine.
