1-pound red cabbage, coarsely shredded

2 quarts boiling water

5 tablespoons margarine

3 tablespoons flour

1 cup milk

1 1/2 cups buttered cracker crumbs

1/4 cup salt

1/2 cup sugar


1. In a 3 quart pot, add 2 quarts of water, the sugar, and the salt. Add your shredded cabbage and boil for 4 minutes. Remove from heat and drain.

2. Add the cabbage to a 3 quart, flat casserole dish. In a large cast iron skillet, melt the butter over medium heat.

3. Slowly stir in the flour and mix well with the butter. Start to add the milk to the butter and flour. Use a whisk to stir in the milk. You want the sauce smooth with no lumps.

4. Continue to cook over medium heat until the mixture starts to thicken. Pour the mixture over the top of the cabbage.

5. Sprinkle with buttered cracker crumbs. Bake at 325 degrees for 45 minutes. Serve hot.
