1 small red onion diced
2 cloves garlic minced
1 15 oz can black beans, rinsed and drained
3 cups cooked brown rice
1 tsp cumin
1 tsp chili powder
1/2 tsp salt
1. Start by heating up some oil in a pan. Place the red onion in and saute till softened and slightly caramelized, about 2-3 minutes.
2. Add in the garlic and give it a few toss.
3. Place the black beans, cumin, chili powder and salt along with 1/2 cup of water into the pan. Bring it to a boil, then lower the heat to a gentle simmer. Let it cook until the water is mostly absorbed by the beans, about 10-15 minutes.
4. Place the rice in and stir-fry it for about 5 more minutes until the rice is heated.
