1 lb zucchini, sliced thinly on a mandolin or with a very sharp knife

olive oil spray

1 tsp salt

2 tbsp grated parmesan


1. Preheat oven to 425. Line a rimmed baking sheet with parchment paper.

2. Spread zucchini slices into a single layer on the parchment paper. Lightly spray zucchini with olive oil spray. Sprinkle salt over zucchini.

3. Place into oven and bake for 10 minutes. Flip and sprinkle with parmesan cheese.

4. Continue baking for an additional 10 minutes or until cheese is browned. Remove and let cool on pan for 5 minutes.
