4 oz Turkey breakfast sausage

1 whole egg

2 egg whites

4 tbsp fat free cheddar cheese

4 sm corn or flour tortillas (low cal or low fat)

4 tbsp salsa

2 tbsp water


1. In a small pan, heat water and cook turkey sausage. The water helps break the sausage up into small pieces.

2. In a small bowl mix whole eggs and egg white, mix till frothy.

3. When sausage is cooked through and the water evaporates, add egg mix. Cook over med heat till no longer wet looking.

4. Heat tortillas in pan or microwave (15 seconds). Lay tortillas on a plate, distribute egg and sausage mixture on one end of tortilla. Add cheese and salsa – 1 tbsp each per tortilla. Roll up from egg and sausage side.
