1 1/2 cup shredded cooked chicken
1 16 oz bag California vegetable blend, thawed
1 cup shredded low fat cheese
1 small onion, chopped
2 celery stalks, chopped
1 tablespoon olive oil
1. Sautee the onions and celery in the olive oil till light brown.
2. Preheat oven to 350. In a 9-inch baking dish, cover the bottom with the chicken. Mix the sautéed veggies and the California blend together and place it on top. then sprinkle the cheese over the top of everything and bake for 30 minutes.
